Homemade custard is good for the soul, and excellent with Christmas pudding.
Ingredients
400ml Cows Milk
1 Vanilla Pod
3 Egg Yolks
65g Caster Sugar
30g Cornflour
300ml Double Cream
Method
Pour cream into a saucepan and gently heat it, stirring it with a wooden spoon, taking care not to let it bubble or boil.
Whisk the egg yolks, sugar and cornflour mixture and the vanilla in a medium bowl.
Gradually add the hot cream to the bowl, continuing to whisk the mixture.
When mixed, add it back to the saucepan using a spatula to remove it all from the bowl.
Gently heat and whisk up the custard until it is thick and smooth.
If it starts to look grainy, it is likely you are overheating so just transfer it into a bowl off the heat and whisk until smooth again and warm over a pan of simmering water before serving.
