Peter Rabbit Inspired™ Carrot Cake

While Peter may have found himself in a spot of trouble for sneaking carrots from Mr McGregor’s patch, we think he’d happily tuck into a slice of this instead.

Ingredients

200g carrots, finely grated

200g self-raising flour

150g light brown sugar

150ml vegetable oil

3 large eggs

1 tsp cinnamon

½ tsp mixed spice

1 tsp vanilla extract

75g chopped walnuts (optional)

For the icing

200g cream cheese

50g unsalted butter, softened

100g icing sugar

1 tsp vanilla extract

Method

Heat the oven to 180°C and line a cake tin with baking paper.

Whisk together the eggs, sugar, oil and vanilla until combined. Fold in the flour, spices, carrots and walnuts.

Spoon into the tin and bake for 35-40 minutes, until golden and a skewer comes out clean. Leave to cool.

Beat together the cream cheese, butter, icing sugar and vanilla until smooth, then spread generously over the cake.

Finish with a few garden-inspired decorations: perhaps tiny marzipan carrots, edible flowers
